Hi everyone! Ever since I was little, baking has been one of the things that brought me the most joy. I was born in upstate New York and moved to Florida with my family when I was eight years old. Some of my favorite memories growing up were baking alongside my grandma during visits and making Christmas cookies with my mom every year.
My husband, Ryan, and I have been friends since we were 12 years old, but we finally got together in April 2014. Our home is filled with lots of furry, feathered, and scaly family members that make up our little family: three dogs — Damien the Hound Mix, Norman the Golden Retriever, and Elliot the Chiweenie — along with Arthur our Flemish Giant, Banana (Nana) the Cockatiel, Frankie the Budgie, Rosie the Bearded Dragon, and Merle the Yellow-Bellied Slider.
Animals have always held a special place in my heart. I went to school for Veterinary Technology and became a Certified Veterinary Technician (CVT), a nurse for animals. I loved caring for animals, supporting their families, and feeling like I was making a difference every day.
While working in veterinary medicine was very meaningful to me, it was also physically and emotionally exhausting. During that time, baking became a major source of comfort for me. I loved learning my coworkers’ favorite treats and bringing cookies and cupcakes to celebrate their birthdays and other special occasions.
In 2023, I was diagnosed with Hypermobile Ehlers-Danlos Syndrome (hEDS), Postural Orthostatic Tachycardia Syndrome (POTS), Fibromyalgia, Gastroparesis, Idiopathic Hypersomnia, and more. Over time, my chronic health conditions made it increasingly difficult to continue working in veterinary medicine. In April 2026, I had to step away from my career as a CVT.
For years, friends and family encouraged me to start my own bakery, but I never truly believed it was something I could pursue or succeed at. As difficult as it was to leave my career, I began to feel that this new chapter might be leading me toward something I was meant to do. That’s when I decided to follow my passion and create Cottontail Confections — named in honor of my sweet Cottontail rabbit, Dexter, my very first baby.
Today, I specialize in small-batch vegan cupcakes and cookies made with high-quality ingredients and lots of love. My goal is to create baked goods that bring comfort, happiness, and a little extra sweetness to every celebration.

Why Vegan?
My love for animals has always been a huge part of who I am. I’ve been meat-free since 2012 and vegan since 2015—a choice I originally made because I wanted to advocate for animals and live more compassionately.
Over time, I educated myself on the environmental impact of our choices, which made veganism feel even more meaningful to me. It became not just a lifestyle, but something I truly believe in and am passionate about.
I love showing people that vegan desserts don’t mean sacrificing on texture or flavor. My goal is to create cookies and cupcakes that feel just as indulgent, nostalgic, and special as traditional treats—something everyone can enjoy, whether they’re vegan or not!
